In the quiet highlands of Da Lat, where mist rolls gently over pine-covered hills, a new kind of coffee ritual is unfolding. This July and August, Miwa, a Japanese coffee artisan, is bringing the art of Nel Drip brewing to HuyEco Coffee & Culture—not just as a technique, but as a cultural experience.
Miwa spent years working at Kabuki, a specialty coffee shop in Tokyo known for its dedication to the traditional Nel Drip method. Before partnering with HuyEco to open a future café named Kissa, she chose to immerse herself in the roots of coffee—visiting our farm, learning how beans are grown, harvested, and processed with care.
“Every cup is different. That’s the beauty of it,” Miwa says. “Nel Drip is not just brewing—it’s attention, patience, and respect.”

Yesterday, we filmed Miwa preparing coffee using the Nel Drip method, framed by the rolling hills of Da Lat. With her flannel filter, bamboo paddle, and slow, circular pour, she transformed the brewing process into a quiet performance. Guests watched in awe as the coffee bloomed, releasing aromas that felt both nostalgic and new.
Originating in Japan in the early 20th century, Nel Drip (short for “flannel drip”) uses a cloth filter instead of paper. The result is a velvety, full-bodied cup with rich oils and subtle complexity. It’s a method often practiced in kissaten—traditional Japanese coffee houses where brewing is treated as a meditative ritual.
Nel Drip reflects the Japanese aesthetic of wabi-sabi: finding beauty in imperfection, slowness, and transience. Each cup is slightly different, shaped by the barista’s hand, the water’s temperature, and the moment itself.
At HuyEco, we believe in craft over convenience. Our farm-to-cup philosophy aligns perfectly with Nel Drip’s values: care, connection, and authenticity. Miwa’s presence here is more than a collaboration—it’s a cultural exchange between Japanese brewing tradition and Vietnamese coffee origin.
She’s not just brewing coffee. She’s learning how our farmers graft Robusta onto Liberica rootstock, how we dry beans under forest shade, and how we preserve biodiversity in every plot. It’s a full-circle journey—from soil to soul.
During her stay, Miwa will also prepare Japanese-style sweets to pair with her Nel Drip brews. This is a preview of what’s to come at Kissa. Café, a future space co-created by Miwa —where guests can experience Japanese hospitality, Vietnamese coffee, and the quiet joy of slow moments.
