But beneath those flavors lies something deeper: the original taste of the bean itself.
And to find that, you need to go to the source.
Da Lat, nestled in the Central Highlands, is Vietnam’s most renowned coffee-growing region.
With its cool climate, rich volcanic soil, and long history of cultivation, Da Lat has quietly produced some of the country’s finest Arabica and Robusta beans — long before coffee became trendy.
In fact, sustainable farming practices once thrived here, passed down through generations.
Today, many farmers are returning to those roots — growing coffee without chemicals, focusing on quality, and caring for the land. But not all of them feel confident that this path will be understood or valued.
That’s why I opened HuyEco Coffee & Culture — a small café and exhibition space where the story of sustainable coffee can be shared directly with those who care.
A place to support local farmers, build trust, and help revive a way of growing that’s better for everyone.

In 2017, I left the University and stepped into the fields. I realized that academic knowledge alone couldn’t help farmers grow sustainably. So I became one — not to teach, but to learn.
I worked alongside farmers. I listened to their challenges. I saw how chemical farming affects the land, the people, and the future. And I asked: how can we do better?
That question led to our first organic coffee farm. And later, to a small café and exhibition space in Da Lat — a place where we could share what we’ve learned, and what we’re still learning.

That means no herbicides, no shortcuts, and no flavor manipulation.
It means harvesting only ripe cherries, drying them carefully, and letting the natural taste speak for itself.
It also means building trust — between grower and drinker, between rural and urban, between Vietnam and the world.
