✅ Only ripe cherries contain the right sugar levels, essential for fermentation and flavor development.
✅ No unripe cherries, ensuring coffee avoids bitterness or harsh flavors.
✅ HuyEco is the first farm in the region to enforce this strict standard, instead of harvesting all cherries indiscriminately.
Natural processing means drying whole cherries under the sun for 20-30 days, allowing the natural fermentation inside to bring out fruity notes.
✅ Water-free method, environmentally friendly.
✅ Full-bodied, lingering sweetness, ideal for specialty coffee.
✅ Bold fruit flavors, such as citrus, mango, plum, or blueberry.
📌 Best season for Natural processing:
🔹 January–February, with plenty of sunlight for optimal drying.
Honey processing exposes the sticky mucilage layer underneath the cherry skin, rich in natural sugars. Also known as Semi-Washed, it does not undergo fermentation in water tanks like Washed coffee, so it lacks acidity.

🔹 December, when rain is more frequent—Honey helps avoid prolonged drying risks compared to Natural.
